OUR STORY SO FAR...

Colvard & Co began on the coast of Maine in 2016, but the company doesn’t have your typical startup story. Chef Carter Light initially intended it to be a side business, selling his restaurant-produced sausages in markets across the State. Then the pandemic hit, and his restaurant Coda, like many others, shut down, and its liquor storage area was converted into a state-licensed sausage-making facility, providing markets all across Maine with an all-natural, artisan sausage.

Today, Colvard & Co has won over a rapidly growing customer base by handcrafting quality sausages that people love.

Meet Our Team

Chef Carter Light

Founder
Carter has always had a love for making food and how different flavors and ingredients pair and blend together. So, naturally, he started a restaurant in the winter of 2015 to share his love and mastery of food with others. Carter created Colvard & Company two years later to run concurrently with the restaurant. Unfortunately, the restaurant closed down during the pandemic so Chef Carter shifted his focus to making sausages. After all, he always had a fascination with old-world techniques of transforming what would be throwaway products into something so incredibly delicious. In his free time, Chef Carter enjoys camping, hiking, and playing frisbee with his dogs, Buddy and Montana.

Cassie Moreshead

Sales
Cassie loves seeing the reaction on someone's face when they first try a Colvard Sausage. She shares the company's values and commitment to high quality and using locally sourced, fresh ingredients. During her time at Colvard & Co, Cassie has more than doubled the sales of sausages and plans to take Colvard Sausages all over New England. She has a Bachelor of Science in Hospitality and Tourism Management from the Isenberg School of Business at UMASS-Amherst. When she is not working at Colvard & Co, Cassie enjoys cooking, baking, and hiking with her two dogs, Tonka and Ozzie.
